Cooking Classes

After many requests to share my knowledge I am pleased to announce that Rushani's cooking classes are here. Rushani grew up in a Sri Lankan kitchen and has an intimate knowledge and understanding of spices native to Sri Lanka. Because of this special upbringing, all of her dishes, whether sweet or savoury, are founded on developing interesting flavour profiles. In each of her classes you will be guaranteed to leave with a better understanding of how spices can be used in every day cooking.

 

Classes to look forward to include quick curries, soup, Sri Lankan food, Japanese food, bread-making and a taste of Sicily, inspired from Rushani's travels.

SOUP CLASS

With the change in season comes a change in what we want to eat. In Autumn and Winter, there really is nothing more comforting than warming up with a bowl of hot, homemade soup. Making soup means having an opportunity to use vegetables that otherwise may be destined for the compost, and they can be a fantastic way to include healthy grains , lentils, pulses and beans into your diet. Plus if you make a bit extra, you can freeze it for one of those hectic weeknights when you want something healthy and quick. 

Not only that but soup is a global food, with almost every culture having its own varieties of soup; from the indulgent French-Onion (One of Rushani's favourites!) to an Anglo-Indian Mulligatawny. So with a little knowledge of flavour profiles, you can travel the world in a humble bowl of soup.

In my soup class you will learn about the four basic types of soup - step-by-step demonstrations on how to make four of these soups, as well as simple toppings and fillers to make your soup more hearty and filling. I will explain how using different spices and herbs in your soups will bring out the flavour of the ingredients you use and explain the basics of a good quality chicken stock. 

In all of my classes you have the opportunity to be as hands on as you wish as I feel people learn best by smelling, tasting, stirring, chopping...and eating. Of course eating! Everyone will be encouraged to taste at every stage of the cooking process, after which each person will have a bowl of each of the four soups to try, plus recipes to take home.

All the ingredients I use are local and organic where possible.

Class costs are $100 per person for 3-4 hours.

QUICK CURRIES

Do you stay away from making curries because you think it means slaving over the oven for hours? Curries can be a very quick and easy meal. They are perfect for the colder months and often made in one pot, making clean up nice and easy! Curry is a great way to use a variety of vegetables and protein in a balanced, tasty lunch or dinner. 

We will take a trip around Asia in this class, starting with a Thai hot and sour prawn curry, a Sri Lankan yellow fish curry, a North-Indian vegetarian kadhai curry and a chicken balti,

 

In all of my classes you have the opportunity to be as hands on as you wish as I feel people learn best by smelling, tasting, stirring, chopping...and eating. Of course eating! Everyone will be encouraged to taste at every stage of the cooking process, after which we will all sit down together to a curry feast, sampling each of the curries with properly cooked rice.
